Let’s start with the history. On the night of September 15, 1810, Miguel Hidalgo rang the church bell in Dolores and called for the end of Spanish rule. The next morning, the fight for Mexico’s independence officially began. That moment—known as El Grito de Dolores—is honored every year with music, fireworks, and traditional Mexican food. Unlike Cinco de Mayo (which celebrates a different historical event), September 16 is the true Independence Day of Mexico.
