The first quesadillas were desserts.
Today, the most basic (but still delicious) quesadilla is melted cheese inside a tortilla. After all, its name does translate to “small cheesy thing.” But before the Spanish came to what is now the Americas and brought their tastes and ingredients with them, the Aztecs put something else inside their tortillas. They filled tortillas with squash, pumpkin, and spices and then baked them in clay ovens to make a sweet dessert. Over time and with European influence, the dish changed and became the savory food we know today.
They’re versatile and easy to make.
Making good Mexican food at home can be tricky, but quesadillas are an easy way to bring Mexican cuisine into your own kitchen. All you need to do is fold some cheese into a tortilla and heat it. Once the cheese is melted and the tortilla is crispy, you’re ready to eat. But a quesadilla doesn’t have to be simple if you want to spice it up. You can add jalpeños, salsa, meat, veggies, or whatever you want. And depending on how much you like to load up your quesadilla, it can be a snack or a whole meal.
