Lunch Fajitas

A couple of restaurants located in West Texas fight to claim the creation of the fajita. However, the bragging rights actually belong to Mexican ranch works located nearby. During the late 1930s, the men would take cattle and butcher them. As payment for their service, they could keep some of the unwanted parts of the meat. There, the workers marinated the beef and cooked it to serve it on tortillas. Today, we serve our fajitas with red, green, and yellow peppers, onion, tomato, and your choice of chicken, beef, or fish.

Enchilada Tapatias

Enchiladas, originally called tlaxcalli, date back to the Mayans. The first enchiladas were simply just a corn tortilla that was dipped in chili sauce. Today, our enchiladas are made with potato, onion, tomato, cheese, and rice.

Huevos con Chorizo

Chorizo is a Spanish sausage that dates back to the conquest of the Aztec empire. During that time, it was already a popular dish. A man named Hernan Cortes and his soldiers began to raise pigs to make more of the sausage. They fed the pigs things like corn to enhance the flavor. Our Huevos con Chorizo is served with two scrambled eggs, rice, beans, and two tortillas.

Lunch Taquitos

Taquitos were first made in a Californian tortilla factory. A man named Ralph Pesqueria Jr. One day, customers for the factory wanted to see if there were any pre-made food items. Ralph considered the request and began to make the Taquito. The factory later became a restaurant where they still run to this day.
